Hawaiian Shish Kabobs

INGREDIENTS:
- 1lb boneless chicken breasts
- 1 purple onion
- 1 red bell pepper
- 1 container of button mushrooms
- A few chunks of pineapple
- salt and pepper
- *The key to this recipe is to slice everything into equal sizes (I like 1 inch x 1 inch pieces), so that it cooks equally!
DIRECTIONS:
- Turn grill on medium-high
- Slice all the ingredients into equal-sized chunks/pieces
- Create an assembly line, for ex., chicken, pineapple, onion, red bell pepper, mushroom
- Using skewers, start putting one piece of each food onto the skewer and then repeat the pattern until there is no more room on the skewer
- Once all the skewers are done, sprinkle them with salt and pepper
- Put the skewers on the grill
- I grill them for 5-6mins per side (won't take long to cook since the chicken is cut into smaller pieces)
- When done, remove from the grill and ENJOY!
OTHER OPTIONS:
- Enjoy these skewers over rice or on top of a bed of spinach
- Add a healthy fat like avocado (or, to keep with the Hawaiian theme, mix in some macadamia nuts and/or cashews)
- Feel free to omit or add any veggies/proteins of your liking (cherry tomatoes would be a great addition, as would shrimp!)
